The crescentina soars from Bologna to London: Indegno's first international venture

In the heart of the British capital, INDEGNO makes its grand entrance, originating in Bologna but embracing the banks of the Thames and a global clientele. It presents an extensive array of stuffed crescentine, an iconic dish of traditional Bolognese cuisine and a regional culinary gem known by different names within the same area. Additionally, INDEGNO serves renowned Emilian delicacies like tortellini and cappellacci, which, like the crescentine, are crisply fried.

Gianmarco Budri, a versatile and visionary Italian entrepreneur deeply rooted in his Emilian heritage, shares the origin of this London venture: "While strolling the streets of Bologna, the captivating aroma of freshly fried crescentine wafted from one of INDEGNO's outlets, and it sparked my intuition. This led me to embark on this project."

Gianmarco's initiation into the culinary realm is realized with the guidance of Federico Benatti from the Studio Benatti in Mirandola (located in the province of Modena), who also harbors a profound interest for the food and beverage industry. Together, they cement an exclusive investment agreement to export the INDEGNO concept beyond Italy. INDEGNO, initially born from the entrepreneurial spirit of three individuals, Andrea Liotta, Edoardo Malvicini and  later Marco Liotta, who established three outlets in Bologna, blossoms into INDEGNO UK. Their ambition is to introduce the tradition of crescentine, still relatively obscure internationally, to a global audience and establish their first store in the heart of London, solidifying their presence in the Italian street food scene.

This culinary proposition extends the essence of Bologna and the "Made In Italy" concept to the United Kingdom, marked by a dedicated commitment to research and the use of premium ingredients. The menu includes options for vegetarians and vegans alongside top-quality flours for crescentine and tortellini, as well as an assortment of cured meats and cheeses.

INDEGNO UK offers "a slice of Italy under Big Ben’s shade," where patrons can relish not only stuffed crescentine with various combinations of high-quality Italian cold cuts and cheeses, including the beloved ragù, but also traditional tortellini. This dish, often savored on Sundays or during holidays, is lovingly handmade by mothers and grandmothers and served in a convenient cone for on-the-go enjoyment. The pumpkin-filled cappellacci are also a part of this enticing array.

Located at number 104 of the famous Brick Lane, a renowned street in East End of London, INDEGNO’s store signs' bright yellow hue make it hard to miss and stand out from afar.Gianmarco concludes, "We selected a bustling, culturally diverse area of the city, frequented by the youth, for our inaugural establishment. The interior has been meticulously designed to accommodate custom-made equipment imported from Italy and house all the necessary ingredients for our menu offerings."
